Monica's Favorite Green Smoothie

Ingredients (Yields 64 ounces) –

  • 1 large handful raw spinach
  • 1 large handful of curly leaf kale
  • 1 pineapple, chopped and frozen
  • 20 ounces of ice cold water

Directions:

Add water, kale and spinach into blender and blend on high until greens are broken down.  Add pineapple and blend agin, until smooth.

 

Today’s Side Salad:

Super C Salad

Monica's Super C Salad

Ingredients –

  • 2 cups baby spinach leaves
  • 1 cup arugula
  • 10 fresh strawberries sliced and hulled
  • Raspberry Dressing

Raspberry Dressing –

  • 1/4 cup frozen raspberries
  • Juice of 1 orange

Blend raspberries and orange juice in blender until smooth.  Pour over greens and strawberries and toss.

 

Dinner Salad:

Kitchen Sink and All Salad

Monicas Kitchen Sink Salad

Ingredients –

  • 1/2 head red cabbage, chopped
  • 1 head romaine, chopped
  • 1/4 cup cauliflower, chopped
  • 1/4 cup broccoli, chopped
  • 1 apple, cored and diced
  • 1/4 cup walnuts, chopped
  • small handful of sprouts (any variety)
  • 1/4 avocado, cubed
  • 1/4 cup red pepper, diced
  • handful of parsley, chopped
  • 1/8 cup pumpkin seeds
(Use what you have on the list and don’t worry if you don’t have ALL the ingredients.  Using them all makes for an AMAZING meal.)

Protein options –

  • Raw vegans- 1/2 cup sprouted lentils, rehydrated
  • Vegetarians/vegans- 1 cup cooked beans or lentils
  • Flexitarians and meat lovers: Wild Alaskan Salmon or Chicken Breast (serving should be the size of your fist)

Apple Cider Dressing –

  • 1 apple cored and cut into quarters
  • 1/4 cup raw apple cider vinegar
  • 1/4 teaspoon chopped fresh basil
  • 1/3 teaspoon dried oregano
  • dash of Himalayan Salt to taste (no more than a 1/4 teaspoon)
  • drizzle of yacon syrup (maple syrup could replace)

    The salad was great I didn’t have all the ingredients but most of them. Making the dressing was great I love the dressing.

    I’m loving it! I’m challenged by some of these exercises because of my limitations with my knees but man this is fabulous. I’ve adjusted some of the exercises to accommodate.The motivation is awesome.The determination I own yes I’m loving it!

    Super C salad is so good and refreshing! I love the dressing. I decided to incorporate this salad all week and just add protein fish or chicken for lunch.
